How to Make Queso Fresco

 

Ingredients

½ gallon whole milk

¾ cup vinegar (either white or apple cider), or lemon juice

cheese cloth (of a piece of cotton or linen fabric)

1 table salt

2 strainers

herbs such as mint, oregano, or basil (optional)

 

Directions

  1. Pour the milk into a large pot. It’s vital that you use whole milk, because that’s the milk that  

     has the fat needed to produce the cheese. Heat it to just before it boils, stirring

     constantly. Stir from the bottom, so that the milk doesn’t stick.

 

  1. Once the milk reaches ‘almost boiling’, begin adding the vinegar (or lemon juice), a little at a

     time. You’ll see the milk begin to curdle.

 

  1. Once you’ve added all of the vinegar (or lemon juice), turn the burner off and let the mixture

     cool for about 20 minutes.

 

  1. Next, pour the mixture into the strainer to drain off the liquid, then, put the strainer with the

     mixture still in it, back into the pot to continue draining.

 

  1. Add the salt. You can also add an herb for flavoring if you like. Be

     sure to chop the herb in to tiny, fine pieces.

 

  1. Spread the cheesecloth (or cotton or linen fabric) over the second strainer, and, spoon the

     mixture into the cloth. Use a heavy cup or jar to press out more liquid. Then, fold the edges  

     of the cloth over the cheese and let it sit in the refrigerator, with the heavy item on it for about

     an hour.

 

  1. After about an hour, the cheese should feel nice and firm. Using the cloth or fabric, lift it up

     from the strainer and put it on a plate. Your queso fresco is ready to eat. Yumm Yumm.

             Then, click: Join

 

You should now see our room number and a picture of money, all on a green background. There is also a short message from me. The next time you log onto Google Classroom, you won’t have to go through these steps. Your computer will automatically remember.

The focus of this year’s science fair is climate change, and how to fix some of the issues, including flooding, severe storms, drought, and wild fires.  Due to climate change, California has experienced a series of severe wild fires.  Hundreds of people have lost their homes and all of their belongings.  Some people have even died. 

 

To address the problem of wild fires,  PG&E has periodic blackouts, during which time we have no electricity.  How would you solve one or both of these problems?
