<p style="text-align: center">&nbsp;</p>
<p><strong>Ingredients</strong></p>
<p>½ gallon whole milk</p>
<p>¾ cup vinegar (either white or apple cider), or lemon juice</p>
<p>cheese cloth (of a piece of cotton or linen fabric)</p>
<p>1 table salt</p>
<p>2 strainers</p>
<p>herbs such as mint, oregano, or basil (optional)</p>
<p>&nbsp;</p>
<p><strong>Directions</strong></p>
<ol>
<li>Pour the milk into a large pot. It’s vital that you use whole milk, because that’s the milk that&nbsp;&nbsp;</li>
</ol>
<p>&nbsp;&nbsp;&nbsp;&nbsp; has the fat needed to produce the cheese. Heat it to just before it boils, stirring</p>
<p>&nbsp;&nbsp;&nbsp;&nbsp; constantly. Stir from the bottom, so that the milk doesn’t stick.</p>
<p>&nbsp;</p>
<ol start="2">
<li>Once the milk reaches ‘almost boiling’, begin adding the vinegar (or lemon juice), a little at a</li>
</ol>
<p>&nbsp;&nbsp;&nbsp;&nbsp; time. You’ll see the milk begin to curdle.</p>
<p>&nbsp;</p>

<li>Once you’ve added all of the vinegar (or lemon juice), turn the burner off and let the mixture</li>
</ol>
<p>&nbsp;&nbsp;&nbsp;&nbsp; cool for about 20 minutes.</p>
<p>&nbsp;</p>

<li>Next, pour the mixture into the strainer to drain off the liquid, then, put the strainer with the</li>
</ol>
<p>&nbsp;&nbsp;&nbsp;&nbsp; mixture still in it, back into the pot to continue draining.</p>

<li>Add the salt. You can also add an herb for flavoring if you like. Be</li>
</ol>
<p>&nbsp;&nbsp;&nbsp;&nbsp; sure to chop the herb in to tiny, fine pieces.</p>

<li>Spread the cheesecloth (or cotton or linen fabric) over the second strainer, and, spoon the</li>
</ol>
<p>&nbsp;&nbsp;&nbsp;&nbsp; mixture into the cloth. Use a heavy cup or jar to press out more liquid. Then, fold the edges&nbsp;&nbsp;</p>
<p>&nbsp;&nbsp;&nbsp;&nbsp; of the cloth over the cheese and let it sit in the refrigerator, with the heavy item on it for about</p>
<p>&nbsp;&nbsp;&nbsp;&nbsp; an hour.</p>
<p>&nbsp;</p>

<li>After about an hour, the cheese should feel nice and firm. Using the cloth or fabric, lift it up</li>

<p>This is just to let you know that I made our ZOOM class meetings, <em>‘recurring’</em> (rather than making a new one every day), and linked our ZOOM account to our Google Classroom account. When you join our ZOOM classroom tomorrow (Friday), you might notice some small changes, and this is why. But the main things should be the same.</p>
<p>As I learn more about how to use ZOOM and Google Classroom, I’ll be making changes, to make our class easier to access, more user friendly, and more fun.</p>
<p>Although it’s not like being back in our physical classroom, I enjoy seeing your faces on ZOOM, and us all working together. 18 is a gr8 team!</p>
